Strawberry Surprise Loaf Cake

Another one of our Clandestine Cake Club themes was that or surprises. Surprise ingredient, surprise looking, surprise inside, you get the idea.

When researching for ideas, I fancied another attempt at that strawberry cake I found on Sweetapolita, but this time in the shape of a strawberry inside a loaf cake, inspired by Peekaboo Pumpkin Cake. It looks really cute, but I can’t think of a more revolting flavour cake! We don’t really do pumpkins to that extent here in Great Britian.

The vanilla cake was not quite cooked sufficiently in my opinion, but timing for baking was a bit challenging all round as the premise is that it’s in a loaf tin rather than in a round cake pan.

The strawberry definitely tasted of strawberry though – no food colouring in sight I’ll have you know!

I’ve ‘translated’ and adapted the recipe for England from Allrecipes where it was originally posted by GothicGirl, via Sweetapolita as otherwise the recipe makes enough for about 20 loaves!

And then, to my great surprise, a weak so later, I was chuffed to bits to suddenly see a picture of my cake not eh office Clandestine Cake Club website! This was a bit of a victory for me, because as I expect you’re fast noticing, I’m all about the flavour, and not so great at decorating and icing. I’m doing my best to improve, but I’m just more flavour-led than I am beauty.
