Portuguese Lime Cake

Google is a marvellous tool for helping me to decide what to do with the left-over contents of my fridge!

I had some left-over limes and I found this beautiful recipe on the cookie shop. And a lovely story to go with it about the author’s Grandma.

Three whole limes went into this subtle three layer lime cake, but I went my own way with the icing. An absolutely delicious result. Just for fun, and to go full circle, I sent a slice in the post to my Gran. I used to bake a cake and send her a slice first class, packed in a margarine tub all the time.  She particularly liked this one.

Since then, I’ve made it gluten-free and dairy-free, still with zingy results. I also had a go a baking it in a slow cooker. Only the one layer. Quite a long bake.

It’s a lovely change from lemon cake whenever you fancy something a bit different.
